Ingredients (Serves 2–3)

3–4 medium potatoes (boiled & cubed)

2 tbsp ghee

1 tsp cumin seeds (jeera)

1–2 green chillies (slit or chopped)

1 tsp garam masala (Vaasira recommended)

½ tsp amchoor (dry mango powder)

Salt to taste

Fresh coriander leaves, chopped



Method

  1. Heat ghee in a kadhai or pan on medium flame.
  2. Add cumin seeds and let them crackle until fragrant.
  3. Toss in the green chillies and sauté for a few seconds.
  4. Sprinkle garam masala into the hot ghee – this quick roast releases a rich aroma.
  5. Add the boiled potato cubes and salt. Mix well so the masala coats every piece.
  6. Sprinkle amchoor powder for that tangy kick.
  7. Finish with a handful of fresh coriander leaves and give it a gentle mix.
